Looks like you have been working overtime(as usual)....I had to add to this subject that I just returned back to Oklahoma from Estes Park Colorado and had to pleasure to dine at a great BBQ restaurant called Smoking Daves BBQ. Man those big Beef short ribs were smoked to Excellence, and the sides were completely out of sight! I ask them how they prepared the Short ribs which are real hard to get pork tender and they told me that they basted and added dry rub throughout the smoking session which really surprised me. They were using a Old Hickory smoker and they definitely have it happening there.
