I am looking at Oyler, Friedrich and Cookshack. Three different types of commercial rotisserie cookers. Which one will cook the brisket the best? Producing a smoke ring and crust is important. Flavor is paramount. I also, need to be able to start it and lock it up overnight and be able to sleep without worrying about the fire and water situation. I currently have 2 wood smokers. One is fired by propane. Both are too small for my food truck business. Does anyone have advice on which of the brands/types of smokers above I should go with? Thank all ya'll for your time in advance!-S
