Mince the fatty bark pieces into peanut sized chunks, take a rolling pin to the minced (barky) fat and flatten the fat much like pie dough. Cut the fattened (barky) fat into 4 inch squares and freeze the flattened fat in sandwich ziplock bags to be used later for saute-ing, flavoring soups, beans, and whatever...just open up the freezer and break off a small bit when and where needed.
