Scott,
I saw your email earlier today. When was your cooker built? There are a few things that influence how it cooks. On my cooker I had to remove the rod that runs down the center of the auger. This increases the pellet feed rate quite a bit. I also changed the intake fan and sealed the firebox and intake areas with high temperature silicon that is NSF approved. My cooker used to have the same problem and sometimes would never get to temperature. Now it runs pretty well. I am also not sure how your temp probe is mounted but it may be a good idea to change it out. They can be faulty and give you all kinds of weird behavior. Hope this helps.
