To clarify my question the heat of the (Jalapeno, white pepper, paprika, red pepper flakes or any number of other heat related spices ) What ever it is it's gives the sauce a nice mellow tang with not being in your face spicy hot. The question here is not so much the heat factor as the the slow build up of intensity. I to thought it might be white pepper, I'll wait to here what others might have to say.
