Any chance your probe is too close to where you put the meat? Hot air and cold meat would give an erroneous probe temperature and be consistent with your exhaust air being hotter than the probe.
Not an FEC100, but someone had a similar problem years ago on some smoker. Meat was getting overcooked and temperature was low because the probe was reading the temperature of the air after it passed over the colder meat.
