I like cayenne sauces but they have many other things added too plus the fermenting involved. As a powdered spice, I agree, very overrated and over used and many other more flavorful spices, chilis, peppers that add much more dimension and any heat level you want. Also like black pepper much more than white, more depth and character. As far as specks in a sauce....who cares, rather have the flavor ;-) my 2
