I've always thought that brining the typical frozen turkey breast was of minimal value. Almost every frozen turkey breast at my grocer's has the following on the label, "Enhanced with up to X% (usually 8-15%) of . . . (list of ingredients, starting with salt). I tbink that they're effectively pre-brined from the factory. Now a fresh, unadulterated turkey breast . . . a brine of apple juice, brining salt and sugar in close to equal amounts, and spices sure does a turkey proud.
