If you are going commercial I would keep things as simple as possible. Here is the short answer. Many believe that stick burners add more smoke flavor than pellet cookers and choose to cook with them for that reason, they do however require a lot more work. Pellet cookers are pretty much a set and forget unit making them much easier and less time consuming to use. I see teams win with both. If I was looking for a wood burner, I would go with the box type cookers like Backwoods, Stumps, etc. they are easier to control and can produce great product. Add a air induction device like the Stoker or Guru and you can pretty much walk away from it. The best track record for pellet cookers probably belongs to Cookshack. Do your homework, talk to people who own them.
