We cooked one last weekend that was about 6 lbs. and 3 ribs long from the small end. We cooked it boneless but still tied with twine to hold a uniform shape. As you are planning to do, we ran about 225°F and it took 4:05 to reach 125°F internal. With your resting and searing plan, I think you'll be in good shape if you plan 5 hours for the entire process.
