I agree with Bob. We allowed our roast to rest for about 30 minutes, tented with foil. This gave us time to get a batch of coals rocket hot and then sear the outside of the meat, turning frequently to prevent blackening/burning the crust. This only took about 5 minutes. We then tented and rested it again for another 10-15 minutes. Doing that will give you about 45 minutes to get the rest of the meal prepared.
