Kale won't wilt. In Hog competitions they use it a LOT as a garnish inside the pit for the on-site judging. No, the pits are not cooking-hot, just being used to keep the hogs warm, but think what any lettuce would look like after a few minutes @ just the temperature of the hog itself.
I doubt any taste will transfer as long as you don't squeeze the juices onto the meat. The leaves themselves are basically tasteless unless you cut or break (or bite) the leaves. Chopped might cause a problem though.
