haven't been by in a long time...so hello old friends and new.
lost almost all my cooking gear in a yard fire. still have the WSSM, but it needed parts,which i finally got in time for thanksgiving.
Resident Evil decided we needed to take up pheasant hunting and, after asking around and getting a variety of less than salavating recipes, i decided to fall back on the tried and true "beer butt" style.
rub them down outside with italian salad dressing, stand them up on a Red Bull can that's rinsed out and partially filled with beer/wine & MOAR dressing, then smoke on the WSSM in WSM mode, using wood from Guava Greg, old school poster here, and hard wood charcoal.
turns out pretty damn good, from the feedback i've gotten. of course these are farm raised birds released on the day of the hunt, so gaminess isn't much of an issue. YMMV
