I did not know you were supposed to braise beef ribs when I did them awhile back, I just pulled the membrane and then scored between the bones and marinated in RSM overnight, then did a modified 3-2-1 method on the smoker. Simple and very tasty. Next time I will braise first then cool down and hold in the frige a day or so before putting them on the cooker. Seems like that way would save some time on the cooking day....cheers...Ed
