did a google, "cottonwood wood used for bbq" and got several hits.
most said it's more mild than alder or pecan and is better used as a source for heat in your bbq with oak or maple or hickory added for flavor.
all said not to use green cottonwood... guessing that's because of what Juggy said about the high moisture content.
none of the listings said anything about it smelling/tasting like bacon... i'm guessing those folks that asked you about it need to clean their cooker.
