Looked into the Iberian breed a few years back. At the time they weren't in US, only in Europe and the finished products could not be imported into the US due to the processing techniques used.
Later US allowed finished products to start being imported into US. I got to try the imported ham and it melts in your mouth, one of the all time taste experiences I've had.
Still later a couple of farmers got breeding stock from Spain and started raising in US.
Believe one of the US farmers is in the San Diego, CA area. Think the other is in Iowa.
By now they probably have some Bostons & ribs for sell.
If ever I get my hands on some Iberian meat I will not be flavoring it with bacon... even if the bacon is from an Iberian critter.
