As a treat, I got an Iberico loin imported from Spain. I just used salt, pepper and cooked on smoker. Served Med rare, was reddish like beef. Quite a bit different than usual pork. And yes, I loved it. I am a huge fan of Serrano and Iberico ham. I include it on my Christmas and birthday wish list now.
