I'm knot sure how a Tejas Traeger differs from any otter traeger, but I'd crank it up to high for the steaks, and down to low for the briskets. I have 2 Traegers, one is medium in size on a cart, and the other is a tabletop model that I bought to take camping. Turns out I use the tabletop model more than the bigger one. For briskets though I use the larger one. The table top model is just right for a couple of tri-tips or 3 to 4 steaks. Works great for salmon also.
