It has been my experience that beef ribs require brazing to become tender. I sometimes smoke mine for a couple of hours at low temp. (smoke setting on my FE) and then finish them in the oven in a cast iron dutch oven with what ever "broth" I want the final taste to reflect. Sometimes it is BBQ and some times it is Oriental like Teriyaki. Some butchers provide a "boneless Chuck Beef Rib" that is fun to play with. More meat and less hassle!
