If more cooking makes them tender and juicy, I bet you are just not cooking them long enough. Sort of like pork ribs, pork butt or beef brisket. You need to let the collagen break down and render out to get good tender and juicy meat. I cook beef ribs as often as I can find some that look good and meaty and well marbled. Seasoning, I just use basic salt, black pepper and maybe garlic powder and/or onion powder. Never have wrapped beef ribs, I just cook them 'til they pull way back on the bone and I can cut into them with a butter knofe.
