I cooked my first brisket on Sunday. I used a pellet smoker which took 9 hours for a 12lb brisket. Prior to smoking, I applied a dry rub and Refrigerated overnight. After smoking, i let it rest 45 minutes before I sliced. I only had one small slice Sunday night and the flavor was just OK. I rewrapped in foil and put in the fridge. After work on Monday, I had a few pieces and the taste was dramatically better. The flavor was intense and damn good.
I can't explain to my wife what happened overnight? Any ideas?
