I hate to answer this quick because I am afraid that if I do you will go away again. So how are you and what have you been doing at least fill in some of the details.

In the past these are some of the comments about whole lamb and lamb in general.

Bill:

You mean "American" Greeks remove the head . . . For some, the eyes were a real treat as well. I do not mind the head, but I draw the line at the eye balls! (smilie thingie)

I should say though that I am 100 percent greek but american Greek but the guys that taught me how to spit roast lamb were born and raised in Greece..guess it all depeneds what they are from??? all I know is I have never seen the ehad on while roasting-its usually cut and cooked separate..sometimes they will spit roast the guts though on a separate spit..now that is good eating

Re: help spit roasting whole lamb (8/14/1999 7:35:41 PM by kathy)

I had a Bulgarian friend who did a spit roast of lamb basting it with wine,
it took 5-6 hours, and everyone got basted waiting.
In Morocco, they bury the lamb in a pit to cook it, and it comes out wonderful.
Good luck!
