If the problem was too much sugar in your rub and/or sauce the meat side of your ribs would have also looked burnt.
If the heat in your offset is coming from the bottom and if your ribs were meat side up for the entire cook then yep, the bone side of your ribs will get more heat and could be the answer to the burnt look on the bone side. If that's the case then maybe rotate the ribs half way through the cook before you foil wrap.
Also, 225-240F for only 3 hours sounds like your temp gauge is off. Make sure your thermometer is accurate and its placement within your cooker is measuring the heat at the meat level and not somewhere else in the cooker where your meat isn't.
