pull the bone out, leave the big muscles in place. remove fat from bottom of butt. but i cook my butts in a pan reserving the rendered fat and grease. keep this just in case you think too dry.
warm the big muscles in a covered pab.. this only takes about 1 + - hr at 300 degrees. out, pull and you are done. season with modest dusting of Byron's Butt Rub.
