I've been looking at and reading about BBQ/Smokers for a couple of years with an eye toward a build. I'm getting really close to pulling the trigger and came across the Chameleon. The look of it and the quality of your workmanship appeals to my aesthetic sense, as a former operator of a fabrication shop.
I've been at the CAD station for the last week or so and I'm getting a feel for the design. But, there is one thing that nags at me: Mr. Ben Lang suggests, in one of his videos, that a flat-top cook chamber can accumulate condensation and sweat on the food. Having run the Chameleon for a while, now, have you had any indication of this? If it can be a problem, I have alternative ideas.
