All my long ago years of reading this forum helped us learn to make BBQ and the how and why of what we do. So thankful for that! But I'll try the other one too.
No, it wasn't Oklahoma Joe quality, but the first butt and ribs were VERY good. We foiled the ribs, don't think we need to do that really (baby backs), and the butt we cooked 11 hours at 225-5-6 lb. one, and said next time we will cook a little hotter to cook out the fat better. But it had a nice bark (not as crisp as I'd like) but the moisture and texture were great!
I am going to try laying a smoke on a brisket for a few hours in the egg sometime then finishing it in the Cookshack. The fact that you don't have to mess with it is a great thing for us, so we are happy and FULL tonight, and look forward to having some very good home-made bbq with little effort and some Paul Kirk's homemade sauces!
