I too have learned a lot from this forum, I only let you know of the other because the electric models do cook a little different and rather than being disappointed in your new smoker, it can offer thoughts/insights on it from folks that cook off of them a lot.
The electric smoker will cook in a moist environment, so it does slow done the cook. It's very easy to use too much wood for flavor also.
I think you'll be happy with cooking at 250*. Please keep us updated on your cooks and feel free to ask any questions.
