if you are adding charcoal to your cook, mid-cook, do you light the new charcoal first and burn it off before adding, or do you just add it to the existing fire. Asking because I am wondering if I should light it before and burn off all that smoke generated from the charcoal before adding it to my existing fire and leaving the only smoke to be from the wood i use. If I don't "burn off the charcoal smoke" does it affect my food in a negative manner?
