Two 2.5 pound slabs of beef chuck shortribs vacuum tumbled for 48 hours in my mini Chef's Elite mini vacuum tumbler in a mix of Sweeter Than Sweet cure, brown sugar, pickling spice and Aleppo pepper flakes. Just gave then a desalination soak and will rub up with coriander, blk pepper and some gran garlic and hit the smoker tomorrow!!
