I have had the large REC TEC for a few months now. It is an absolutely fabulous machine for true low and slow BBQ. I have had Webers, offsets, electrics, and this beats them all. Since I have had my several decades controlling a fire, I do not feel guilty at this point using the "set it and forget it" REC TEC! It holds set point perfectly. It burns so clean, I only vacuum up some ash every 5 or 6 cooks! It is built like a tank. It was easy to put together (for 2 people). One fear did not come to pass: It DOES generate great smoke and a smoke ring -- at 225. Go higher, and you will indeed get less smoke and ring. Perfect for ribs, butts, briskets, other large cuts. BUT... honestly I don't think it is good for any sort of hot grilling. The fire is under the drip pan... you can indeed set to 500 degrees, but it's not the same for burgers, steaks, etc. as a direct fire. Chicken is okay, if you cook it hot, since under 300 the skin will be rubbery. So go 400 and it is good, but you will not get a char like direct coals. There is a grill plate that may help with grill marks -- I did not get it, so I don't know how well that helps. Anyway, I love my REC TEC, but still have a couple of Webers for direct work!
