Raymond, I used the Sicilian sausage recipe from Len Poli's site. Since I was using it as a rub I cut the salt down to 1 Tbls. and eliminated the water. I rubbed the ribs and left them in the refrigerator overnight and cooked them on charcoal only(no wood).
