Yo to All, I have been trying something different with boneless/skinless chicken breasts. (Hard to believe that when they are on sale, these things are about a third of the price of wings.) I have concocted a sandwich recipe that uses a slice of ham, three half slices of cherry smoked bacon, a slice of cheese and a partial piece of smoked chicken breast.
What I do with the chicken breast is this. I trim each breast so that they have an even thickness through out the meat. I trim the edges and cut the trimmings into bite size pieces. I marinade the breast for a few hours, apply rub and cook them on this brand new WSM I am so happy to own. Once the breasts are done, I slice them down the middle of the thickness and get two sandwiches out of each breast. You can use whatever cheese and condiments you want to finish the sandwich.
The trimmings work great for stir fry or fajitas. The last time I cooked breasts, I took the trimmings and placed them on a vegetable grill and cooked them on the WSM. I removed the water pan before placing the vegetable grill on the top rack of the smoker. The chicken trimmings were not seasoned or marinated, I just cooked them plain. They cooked quickly, but yet absorbed some good smoke flavoring. I used the chicken for fajitas, but next time, I think I will use some of the cooked trimmings for pizza.
