I do hot and direct/indirect mix and towards the end hover with a Therampen and pull at 134-135. Cover in a cake pan for 20 minutes and slice with a nice pink blush in the middle. If people want theirs more done, a quick dunk in some au jus will do the trick. Just made a 4 pounder last nite on the Weber Kettle and had leftovers tonight!
