Pork loin is a perfect muscle for a brine. 160oz water, 1 cup coarse kosher salt, 1/2 -1 cup brown sugar (your choice), bay leaves, peppercorns, 4 cloves garlic, 8-10 cloves and some allspice berries. Bring to a boil then turn off the heat and sit for 1/2 hr to infuse the brine. Cool to 38* then 24 hr brine time. Cook @ 300 to an internal temp of 140* Wood flavour is your choice
