Thighs are a wonderful part for turn in. Bone in, bone out, skin on, skin off. If you want to rock the boat and be different, try turning in something that has a crispy texture and is not coated in sticky sweet sauce. What I refer to as "candied chicken."
Every category cooking process goes on a wave sign. I think we have just about seen the end of the heavily sauced chicken.
Judges are starting to mention this fact.
