They are comparing different methods of searing steaks and which gave the better crust, texturally and taste. I feel they shorted themselves not including a sublimley screaming hot cast iron skillet with some lard. I think the cast iron would rule as far as the sear and crust goes!! All steaks were ribeyes that were cooked rare 'en sous vide' first, so they were all seared in a seconds to a minute or so. A fun video, worth a watch!
