Hello all. Quick question: My Dad was recently re-diagnosed with oral cancer. Because surgery is not an option for him, he is trying a very strict no-meat diet to combat cancer.
Right now, he is mainly drinking "green" smoothies.
My siblings and I are flying in to see him in a few weeks, and he wanted us to BBQ/smoke a few times. He's got a pork butt & loin in the freezer, as well as a few chickens. He wants us to go-ahead and eat, but he is not able to eat the meat.
SO my question is this: What "meatless" main-dish could I smoke/bbq for him that he could enjoy? Have any of you faced this dilemma? Any thoughts would be greatly appreciated!!!
