The Santa Maria style grills I'm familiar with have a meat rack that has an adjustable height so you can adjust the distance of the meat from the coals.
You'll want to get the roast about 18" or more (probably more) from the coals.
You can also use fewer coals directly under the roast than what you would when grilling. Can place more coals (as needed) around the footprint of the roast.
Another trick would be to make a "tent" cover for your roast by placing an upside down foil roasting pan over your roast. Put some fire safe bricks around the roast and put the pan on top of the bricks to create a little oven effect... or if you have a Weber Kettle or WSM use the domed lid without the fire bricks to create the "tent".
