Can't say I've ever eaten bear I hear it can be pretty gamey? Bet it would work well in a chili. For competition chili on the left coast we use a lot of Tri Tip. Got lucky this year and qualified for the International Chili Championship but I won't be going due to my daughter's wedding...had to think about it. We once entered an anything goes chili contest, everything from alligator to rattlesnake was turned in. Got lucky again and won that one, too. We made a base chili, drained off the little round pasta in Spaghetti O's and added them to the pot, we called it Texas Armadillo A_ _ hole Chili.
