smoking ribs

i need to cook 50 slabs. i was thinking about smoking them for 2 hours or so, foiling them & storing them in a cooler until it is time to finish them on the grill and serve them at my event. i want to make sure they are hot enough to not worry about bacteria...any help is appreciated
