I have been asked to cook a charity event for school. Well, truth is I have been doing this for years and I don't think they can find anyone else to do it. I really want to change things up this year. The menu for years past has been pulled pork, chicken and Tri Tip. sides, salads, etc. What I would like to do is cook a few beef roasts either in the cooker or on a rotisserie, something when done that can be carved at a craving station. Prime Rib is too expensive and probably a whole New York or Rib Eye would also tip the scales. I'm looking for a trifecta win with cooking technique, presentation and taste. Any suggestions?
