Some folks won't eat the pork or the beef but will go for the chicken.
Some will load up on the pork and/or beef and duck the chick.
I'd allow for 90 people and provide for 4 oz pork, 4 oz brisket and 2 pieces of chicken per person... better to have left overs than the alternative.
Would allow for 40% to 50% shrinkage/trimming from the raw weight of the pork and brisket and cook chicken leg quarters (thighs with leg attached).
After cooking would split the chicken leg quarters so folks could choose either thighs or legs.
Again, you'll have leftovers but probably not much.
