The last several times I've cooked St. Louis ribs, I've overcooked them and there has been no smoke ring.

Here's what I did today: 3 hours at 250, then an hour in foil, then almost an hour out of foil, sauced.

Almost falling off the bone, no smoke ring.

What have I forgotten?
