Ok, here's a question about what is allowed at KCBS inspections:

I my mind the meat that we use is straight from where we bought it. It can't be trimmed before hand and must be in the original packaging.

School me, It's not my first BBQ. I've been doing it since 2007. You Trim, inject, marinade and rub it onsite right?
