I'm cheating today and cooking 6 racks of ribs in an instant pot in batches then finishing on a grill.
1. Any harm in doing them ahead of time, refrigerating then finishing on grill or should I just rip through them inline (instant pot straight to grill)?
2. Any tips for finishing on the grill? Last time I did this with a smaller batch, the ribs were a mess in that they were so tender they couldn't stay on the bone. Concerned about the grill.
