Smoked Wild Duck Tacos Recipe

Smoked Wild Duck Tacos with Queso Fresco

- 10-15 wild duck breasts (hunt them or find a hunter)
- 3 1/2 cups milk
- 7 tbsp vinegar
- tortilla shells

Instructions:

- Smoke duck breasts to around 165 in your offset, pellet, electric smoker etc. (recommended for food safety but I personally like 145-150)
- Heat milk to 165 degrees and add vinegar; stir and let sit for 10 mins. Then strain through cheesecloth to make queso fresco
- cut duck into long strips and serve in tortillas with queso fresco, guacamole and hot sauce
