Your roast will be in the "danger zone" (40F to 140F) for 3 hours +.
Maybe cook it, rest it like you normally do, slice it, bag it, put some ice in the cooler and transport it chilled.
When you get to the party heat up some beef broth and dip the slices in to warm... but, note the medium rare pink will vanish as soon as you put in the hot broth... will still taste great, just won't be pink... also will be food safe.
