I have been asked to go to the Orlando area and cook for a budding grocery retailer chain. I would fly to the area, rent a truck and a small pit on a trailer and do pulled pork, brisket etc. as a grand opening event. Any ideas about where I would look for a offset stick burner large enough to do a couple of hundred pounds of pork or brisket it one cook?
