We've done a couple, and yes, they're basically a green ham with the shank intact.
They present well, look great... don't try to cook until pullable... they don't have the collagen that the front shoulders have.
Your cherry approach sounds great, but then so does your alternate maple peach do.
Treat it like what it is... a ham with a handle.
