I'm a firm believer that restaurants do not serve "prime" or higher grade beef when they do what they sell as Prime Rib. In my area they use a good choice grade and cook it slow to get the even pink appearance we all seem to like. If they served any grade higher than choice they would need to charge $75 a serving to make any money.
